What is Kokumi?
Kokumi (こくみ) is a Japanese term for the sensory quality of richness, depth, and complexity in flavour — distinct from the five primary tastes, yet making everything more complete. It's the difference between a product that's merely correct and one that is genuinely memorable.
First described by researchers at Ajinomoto Co. in 1990, kokumi refers to the enhancement of mouthfulness, thickness, continuity, and lasting finish — qualities that go beyond any single ingredient. It isn't a taste you can point to; it's the difference you feel when everything comes together.
